It is possible to experience pressure drops if the intercooler & plumbing setup is off (not designed well), this might be noticed in the form of lag which could be more apparent if the pressure drop is excessive and causes the systems maximum efficiency level to be exceeded at any given time.

Oil & coolant temperatures are directly effected by how the vehicle is operated, by weather conditions, by air flow and by the ambient temperature.

Any increase in coolant temperature noted upon the installation of my FMIC over the stock intercooler setup was nominal and is really only realized when the ambient temperature is higher, otherwise my coolant temperature stays at about 180F - 200F, remember, this is with a larger much higher pressure turbo system with substantially bigger injectors in place which creates much higher charged air temperature levels than the stock system does.

My FMIC core does not exceed a 3" thickness which about the maximum for achieving the best flow thorough characteristics, so, unless one is running one of those ridiculously thick cores that restricts the air from passing through it easily and/or the intercooler/plumbing is otherwise poorly designed, then the coolant temperatures should only rise to a small degree if at all, making this a non-issue.

My cooling fans come on with about the same frequency as they did when the car was in stock form, so as far as my car is concerned, increased fan wear and negative results from increased coolant temperatures is also, a non-issue.

well the pressure comes from the air expanding and then contracting as it flows through your intercooler, which happens twice on a DSMIC setup. The fewer cfm your turbo puts out, this drop will be larger (proportionally) to your overall boost pressure. A K03 or K03s doesn't put out a tremendous amount of cfm. You're correct in that the turbo will put out what is requested of it, but getting that output into the engine is an entirely different process.

not to mention the tighter the turn the tubing takes, the more it will cut down on air velocity, and I'm guessing you'll have a few tight ones on a DSMIC setup.

For me it's occham's razor. In order of simplicity of setup it goes upgraded SMIC, FMIC, DSMIC.

that and I'm not sure how easy the install will be on the second SMIC.
