The easiest way to access the PCV valve is to remove the intake manifold. If you have small, flexible hands, try removing the Secondary Air Pump and get it from there... but it's tight.

The PCV valve begins with the breather hose (at screwdriver) connected to the oil/coolant heat exchanger. It then goes to the right to an up-side-down T connector. The PCV is inside that sooty T connector.

PCV removed...

In addition to the PCV valve, you probably need to buy the breather hose, O-ring gasket, clip, the T connector and hose clamps.

ECS Tuning has them... Volkswagen New Beetle 1.8T > Search > Pcv Breather Hose

It is not necessary to remove the intake manifold in order to replace the PCV valve as this is a lot of extra work and could open up another can of worms, the valve is located near the left end of the intake manifold at the top of that rubber TEE connection.

I have reasonably big hands that can reach 10ths on a piano and I made pretty quick work of this job...

Take your time and remove the the required clamps, pray a little oil around the sides where the PCV valve fits in the TEE and carefully wiggle it and pull it out.

Make sure that the area is clear so that nothing falls in there, replacing the surrounding hoses and rubber TEE might not be a bad idea while you're in there.
