I just did this last week to diagnose some speaker static in the back. You have to take out the seat bottom first by pulling it up and squeezing the metal support that holds it in place. Then you have to undo the two bolts on the back of the seat and like Nico says...push the retaining clips back on the side. Wiggle and slide the seatback up and out of the way.
Now you can remove the panels. I would start from the lower back corner and pull out. Work your way around the bottom and the side pulling the clips out and working the panel around the door gasket. Then, once those are all loose, pull up on the panel to free it from the clips by the window and then slide the back seatbelt out through the slot in the panel. Done.
To reinstall just reverse the process, but if any of the clips by the window come off on the panel...remove them from the panel and put them back on the part right under the window.
It's really not as difficult as it may sound and took me less than 30 minutes to do all of that.
