It sounds just like a problem I had with my '96 Golf. It would drive very erratic sometimes, wouldn't respond to the throttle and sometimes it would just die all together; it turned out to be a bad fuel pump. I'm still learning about the NB so I'm not sure if this is a possible problem but it's probably worth looking into. Good luck!
