Is there a 6 speed manual transmission for a 2.5L 5 cylinder?

Nope....6 speed automatic or 5 speed manual. The Turbo S (1.8t) had a 6 speed manual transmission.

No they don't make em. I wish they did sometimes though the 5th gear is still pretty low. I think the fuel economy would be great if there was a 6th cog.
