Default Oh deer!

I got some venison from a guy at work and enjoyed the steaks and burgers I grilled up tonight, but I did it in a very basic way. I marinated the backstrap steaks in a beer for a few hours, then just put salt and pepper on everything before throwing it on the fire. But I'm wondering, does anyone out there have a good recipe for cooking up Bambi?

I did it the way I did so I'd actually be able to taste the meat, otherwise I figured there's no point in using something other than the beef/bison I'm used to. I'd kind of like to keep the recipes that way, something that accentuates the flavor of the deer, but not enough to cover it up.

Thanks!

No, I'm sure I would have noticed the extra packs of shoulder roast.

You'd think a deer with all those legs could run faster! But I hear he had been a horrible dancer. He had 4 left feet!

Babe winkelman has some great recipes. Go on his website.
We recently left the "hams" of our deer with a barbecue man to be smoked and cooked. We went back and picked up the frozen 3 to 5lb packs of chopped deer bbq. Everyone loved it at Christmas gatherings. Bought some sauce at a local bbq pit and served it with buns.

Thanks, Laurie!

Fortunately I didn't have to see the grizzly aspect of it. I was upset enough to see a picture of the deer I was about to eat! Poor little guy. But tasty nonetheless!

I tried deer this year. I bought some venison steaks. And like you i kept it simple. I merely used salt and pepper and i might used a smidge of cayenne. I have to say that i really didnt care for it at all. Did you ever get it right? I'd certaiinly try it again, but not with me at the helm cooking it.

Actually, John, I found that it was best if I started grilling it while it was still frozen. The bulk of what I got was cut into strips, rather than a more traditional steak, so if I just put it on the grill it was too well done really fast. Cooking the meat frozen got it done just right, and it was easy enough to salt and pepper before they were done.

But it was definitely a different flavor than I was used to!

kcfoxie said this...

"I like to cook venison (that's bambi for the unaware)

Soak in milk for 24 hours in the fridge to remove the "game" taste."

Try that next time Jacob. My cousins are leaving tomarrow to go hunting. Want any deer? LOL!

Some guys at work have jerked it before. That would have been a great thing to do with the thin strips! Silly me.

I can't soak it in milk, though. That wouldn't be kosher!

Fortunately I think I learned to get rid of the excessively gamey flavors.

I can't believe I didn't catch that! Nice job!

I wish I still had some of the steak here, I never thought about drying it! Damn. I'll have to see if I can get like 1 or 2 packs from someone at work. I'm sure there's plenty to go around!

As for eating cute animals, there are a number of meats my brother won't eat because he respects them too much.

Fortunately for you rabbit isn't kosher, so you don't have to worry about me eating your little funny bunny!

I have been watching my supermarket freezer section. Occasionally they get in some nice rabbit. I'd cook it up and eat that, no problem. I've eaten amphibians and reptiles, i might as well move on to rodents.
