I got some venison from a guy at work and enjoyed the steaks and burgers I grilled up tonight, but I did it in a very basic way. I marinated the backstrap steaks in a beer for a few hours, then just put salt and pepper on everything before throwing it on the fire. But I'm wondering, does anyone out there have a good recipe for cooking up Bambi?
I did it the way I did so I'd actually be able to taste the meat, otherwise I figured there's no point in using something other than the beef/bison I'm used to. I'd kind of like to keep the recipes that way, something that accentuates the flavor of the deer, but not enough to cover it up. Thanks!

I tried deer this year. I bought some venison steaks. And like you i kept it simple. I merely used salt and pepper and i might used a smidge of cayenne. I have to say that i really didnt care for it at all. Did you ever get it right? I'd certaiinly try it again, but not with me at the helm cooking it.

Actually, John, I found that it was best if I started grilling it while it was still frozen. The bulk of what I got was cut into strips, rather than a more traditional steak, so if I just put it on the grill it was too well done really fast. Cooking the meat frozen got it done just right, and it was easy enough to salt and pepper before they were done.
But it was definitely a different flavor than I was used to! |

Some guys at work have jerked it before. That would have been a great thing to do with the thin strips! Silly me.
I can't soak it in milk, though. That wouldn't be kosher! Fortunately I think I learned to get rid of the excessively gamey flavors. |

number one on the list is rabbit! can not be near it no freakin' way if you serve it i'm out of there. not gunna happen no freaking way. just can't handle it. can't eat my pet no way, you go eat your cat then call me, but i'm not eating a bunny.

I have been watching my supermarket freezer section. Occasionally they get in some nice rabbit. I'd cook it up and eat that, no problem. I've eaten amphibians and reptiles, i might as well move on to rodents.
