Default Baked Oatmeal

My parents / sister got this recipe a few years ago. They've taken a few trips out to Lancaster, PA and the Amish Bed and Breakfast served this every morning.

My mom made it over Christmas and I asked for the recipe. I just made my second batch tonight. The first batch lasted me a whole week!

Here's the recipe:

2 Eggs
½ Cup Oil
1 Cup of Sugar
4 Cups of Quick Oats
1 Teaspoon Salt
2 Teaspoons Baking Powder
1 Cup of Milk
Fruit

In a medium - large casserole dish, beat the two eggs. Add Oil & Sugar and mix well.

Add Oats, Salt, Baking Powder and milk and mix well.

Bake @ 350 for 50-60 minutes or until set in the middle and golden on top.

When ready to eat, just scoop out some of the baked oatmeal in a dish, add some fresh or canned fruit. Then add a little milk. It's awesome!!!
