Default I'll share my chili recipe

I'm really proud of this chili recipe and from the sounds of it, there are some avid chili lovers here too! SO I'd like to share this with you...no strings attached. I also love to get recipes from others. By the way, this chili is NOT for anyone on a diet or who is a vegetarian (sorry).

Holy Trinity Chili

From the beautiful union of 3 meats and 3 chiles comes a chili that will never let you down - thank the heavens and feel the heat!!!

Makes:
Prep Time:
1 hour
Cook Time:
4-6 hours
Servings:
8

INGREDIENTS:

* 2 pounds ground beef, cooked and drained
* About 9 strips of bacon, diced and cooked (save fat)
* 1 package Johnsonville smoked sausage, cut into bite size chunks and browned
* 2 onions, diced
* 8-10 garlic cloves, peeled and diced
* Chiles: 3 Anaheim, 3 Jalapeno, 3 Serrano, seeded and diced finely (or whatever chiles you love)
* 2 (15 oz) cans pinto beans, drained
* 1 (15 oz) can chili beans in mild sauce (NOT drained)
* 8 oz beef broth
* 1 (6 oz) can tomato paste
* 1 (28) can diced tomatoes with sauce
* 3 tbsp Worcestershire sauce (or to taste)
* 1/3 cup brown sugar
* 3-4 pinches salt
* Pepper to taste
* 2 tsp cumin (or to taste)
* 2 tsp chili powder and Chipotle powder (or to taste)

DIRECTIONS:

1. Put on a burner set at medium heat and in an 8 qt. stock pot add onions, garlic, beans, broth, and tomato products on the bottom.
2. Add the meat, peppers, bacon grease (as much as you want, I usually add about ½ of what was saved) and spices/seasonings on top, stir together.
3. Leave uncovered just until it starts to lightly bubble.
4. Put on a lid and drop the heat to low for 4+ hours. Occasionally stir and make sure the chili remains barely bubbling. If it is too watery (and it usually is), add less broth and/or let it simmer uncovered until it thickens more.
5. Best with sour cream, cheese, cornbread, and something to cool your mouth off (beer).

Beef, sausage and bacon???

Yummy!

I'll have to try it. What could I sub for the can of chili beans? I can't use canned beans. (Too much salt + high BP = bad)

I'd say you can subsitute a can of your choice of other beans--like kidney, you won't have the exact same taste in the end as his recipe, but I bet it would still be darn good.

Sounds very yum!

Sounds great!

Here's my chili recipe:

Brown ground turkey.
Throw turkey, 2 cans of kidney beans, 2 cans of diced tomatoes, and a whole bunch of spices in the crock pot. Simmer for at least 8 hours.

It never comes out the same way twice, but that's the fun part!

I'll have to look at a can of the chili beans to see the seasoning. I use dried beans. They're a PITA, but the sodium count is nil compared to canned.

I'll ahve to try it out and let you know how it comes out.

I got this simmering on the counter.

It smells yummeh!

I should have checked the size of my crockpot before I started addlibing and adding more beans and such. Its very full

Smells great... cant wait to taste it

This Chilli is pretty damn good, maybe next time I'll remember to put in all the ingrediants...

I'm so glad you like it - I know there's a LOT of prep work that goes into it, but it'll feed 2 people for a week!
I'm trying to enjoy cooking more often - I have fun when I have all day to cook, but if I have to come up with something with only an hour to spare I can't do it without having a fit or an incident. And cooking is no fun when there isn't someone there to eat your food!!!

So true, I miss having someone to sit across the table with me... oh well.

....

On another note, my coworkers are all jealous, so I am taking a big container of it into work tomorrow with some freash cornbread I baked

Ive developed my chili over many years, and sometimes I adlib so its never the same .lol I call it 3 bean chili

2 lbs hamburger browned (I spice mine with cumin, pepper, garlic powder, and some chipltle pepper seasoning )
1 onion diced and sauteed
Green and red peppers chopped (you can use canned or roast your own in stove flame and peeal and chop anahiems (sp?) work well or try several kinds)
3 tomitillos ( peel, cut and parboil to soften, then I puree with chopper and add in 1 jalepeno deseeded )
roasted green chilis diced
2 cans great white northern beans
2 cans Black beans
1 can tex mex pinto beans
2 cans stewed tomatoes cut smaller chunks
for suace I add V8 spicy juice.
Mexican or regular ground chili peper (mexican is a little hotter )
Use to your taste, I always go crazy and coat the top of the chili pot liberally then stir in Do not cook chili powder with meat direct heat causes it to burn )
I dont rinse the beans the starchy goodness acts as a thickener If you want it thicker yet add a can white beans rinsed and pureed

add all ingrediants to crock pot or stew pot and simmer all day
