I agree, they did oversalt it, but they did scrape most of the seasoning off and only "steamed in" (as they put it) some of the coating. Honestly, they made this much more difficult than they needed. They could have just used some lemon zest, pepper, salt, and a bit of dried mustard to the same effect and grilled it straight off with a nice seared crust.

they just wanted to be EXTREME!!!!!!!!!!!

Meat is manly for obvious reason...it's what we are and how we see women.

And in NY/NJ, bagels aren't chic food or chick food. Bagels are a staple of the diet of anyone living anywhere near the Hudson River. Let's be clear....unless you've been here, you've never had a real bagel.
