Default oatmeal pancakes!

A friend of mine gave me this recipe last year, and it was okay, they were always thin and heavy feeling, but I think I got it figured out the right way today.

1/2 cup old fashioned oatmeal
1/4 cup cottage cheese
4 egg whites
1 teaspoon vanilla
1/4 teaspoon cinnamon
1/4 teaspoon allspice

She said to mix everything in the blender and then pour and cook, but I tried whipping up the egg whites first, like a meringue, then I put everything else in and blended a bit more to mix it well. The last part, which I guess is always the case with pancakes, is to let it sit for about 10 minutes to thicken up.

I just figured I'd give it out there for anyone who cares. They're kind of healthy, if you're into that sort of thing.

Plus, they leave the perfect amount of egg yolks for a batch of hollandaise! Yum!

Mmmm!!! I wonder how they would turn out if I used fat free cottage cheese which of course would make them even healthier!
