You know those little, thin steaks you find at the grocery store. They look like rib-eyes, but they're smaller and thinner, yet not that easy to cook? Well, here's two recipes to use with one of the "family" packs of those (8-10 pieces).
1. Steak and Onions. Ingredients - 1 or 2 onions, preferably sweet onions (Vidalia) - steak - Other favorite vegetable (peppers, mushrooms, asparagus) Slice the onions into about 1/4 inch slices. Put all the onions into a pan with some butter and olive oil, and let them brown slowly for about 20 minutes or so. Add some salt and pepper to the steaks, and fry each piece for 2-3 minutes on each side. You should be able to fit 4 in a pan. Once done, put them on top of the onions, and do the other batch of 4 steaks. Once they are done, put them in the pan with the onions, flip things around and put under a lid and turn the heat down. Prepare your other vegetable(s) and your rice or mashed potatoes. Flip the steaks around in the onions every now and then. The steaks should now be nice and tender and very flavorful. 2. Teriaki steaks. Ingredients - Remaining steaks from #1 - Asian style noodles (Udon, soba). We've found some nice organic ones we love ![]() - Peppers, chopped (fresh or frozen) - Honey - Soy sauce. Boil up some water for the noodles. Chop the steaks into 1/4 inch strips, and toss into pan with the chopped peppers. Mix 2 tablespoons honey with 2 tablespoons soy sauce. Toss the steaks and peppers around so they don't burn. Throw the noodles in and cook as indicated on the pack (5 - 7 minutes). Once the noodles are done, toss the honey/soy mix over the steaks and peppers and stir. Drain the noodles, and place on plate. Spoon steak and peppers and sauce over noodles.
