Thumbs up Thai Twist Corn Chowder

Okay, here's the one I came up with for leftover sweet corn on the cob. But I do imagine I'll make this during the winter with frozen white corn...

EVOO in bottom of stock pot
one cup sweet onion chopped small squares
one whole lg red bell pepper chopped small squares
cook for about 5=6 mins on low/med while you peel and chop small, 4 med size organic russet potatos
add potatos and add one box of organic free range chix stock
cut corn off of 6-8 cobs and add to pot
add some good organic paprika, a few shakes and kosher salt to taste
add two cans of light thai coconut milk
thai red curry paste to taste---I used aprox. 2 tbls
splash of 1/2 & 1/2 to round out the flavours
fresh ground black pepper to taste

add cooked, cooled and chopped--thick sliced streaky bacon

Serve with fresh baked corn bread

Sounds good. I'd add one thing: Thai lime leaves (or Key lime leaves), which crop up in a number of Thai soups.

This chowder is seriously addicting.

Well, I have Key limes on my patio. But in your case, I see you live part of the year in New York. If that's New York City, ask your local Thai restaurant for their source or visit an Asian grocery or supermarket. What the Thais use is called the Kaffir lime, and it's a small lime with a pebbly surface.

One of my favorite Thai soups is Tom Yung Goong (spelled various ways), which has shrimp, chile, lime leaves, lime juice, and lemongrass among the main ingredients. And coriander? I forget.

If you can't get aholt of any of these, just squeeze some lemon or lime or sour orange into the soup, along with the grated rind.
