Okay...bought some beautiful lamb and some nice looking bracciole. I want to make a slowcook sauce, and with that i have no trouble. However, my question relates to seasoning. What kinds of seasonings would i use when browning the lamb? Rosemary? Sage? Fresh mint? The bracciole i have no problem with. I can handle that.

Does any of our Italian Buggers have a recipe for such a sauce? One of my ex's mom makes a sauce like this and i feel i am finally up to the task of mimicking it. Course she used the lamb, meatballs, and sausage in hers. That's just too much for me.

Lots of garlic a little mint. Rub the lamb with a little olive oil. Thanks...now I have to go get some too!!!

I actually have the Sopranos cookbook(dont laugh! I've made some awesome dishes from there) and I'm almost certain there is a recipe for lamb in there along with a few different sauce recipes. I'll thumb through later when I get home and find it for you.
