Default 2000 vw beetle question

so my mom has a 2000 vw bettle gls-5 speed
ive been driving it to school cause right now i dont have a car
but anyways, i noticed a couple things
whenever you let off the gas, or give it gas it jerks, not side to side, and its worse in the lower gears
and after its been warmed up, if you try to start it again, itll somtimes die, so youll have to give it gas so it wont die,
and just recently it seems to idle a bit higher, usually it idles at around 800, now its starting to idle at 1100
i was wondering what would cause this?
i was thinking maybe the fuel pump or fuel filter
it has 67000 miles, so just had the 60,000 tune up
clutch is still good
but the bug seems harder to get a smooth shift than from other manual cars ive driven
and of course this one has electrical problems too that bugs are known for
and also, going 60 mph in 5th gear, the rpms will be at like 2800-2900, dont know if thats normal or not?
seems kinda high
any help is appreciated

The rpms @60mph look correct. Scan it for codes. Even if there's no CEL there might be some codes stored in the ECU. I think places like Autozone do the scan for free. Has the fuel filter been changed as part of the tune up? The jerking could also be your MAF or even O2 sensor starting to die.

i checked the sheet and it said they replaced the 02 sensor and maf sensor
otherwise see nothing about the fuel filter

The fuel filter might have been changed at the 40K service.
However, if you have no record of that, I would change it.
Filter prices are anywhere from $12 to $40. DIY instructions are on here, and filter is easily accessible on the car. The only mantra when changing is "don't break the clip," meaning the connection between the fuel line needs to be handled with care.

so after school today i took the car to an automatic car wash
usually i wash the car by hand, and my mom never uses car washes,
but i decided to use it, cause the bug seems to attract a lot of bugs
and after the wash, it seemed like the jerking was barely noticeable now
could it be that all the dirt and crap from underneath the car was causing it?
cause havnet really washed under it in a while, and theres still a bunch of crap underneath it still?
so could that be causing the problem
it was all highway from the way back off the car wash, so i slowed down and shifted into
3rd, and again it was barely noticeable.

then after i got home, shut it off, started it back up again, and started and didnt die
but the idle is still in the 1000-1100 range

Foreign (dirt/sand/whatever) contaminants usually do not affect the operation of a car unless the protective covers are missing. However, water can get into places, where those contaminants cannot.

Off the top of my head, I would inspect the coil/coil packs, spark plugs and wires, and the connections for the cam sensor, throttle body.

went to autozone to see if there was any codes
passed, no codes
asked the lady what she thought it might be, she said check the fluid levels, i asked if it could be the fuel filter, she said its a possiblity but would be having problems all the time not just when i let off the gas
but we took it to the dealership today to get some of its electrical problems fixed
and my mom asked them about the jerking, but they said its normal?
seems kinda weird..
told em to check the tranny fluid just in case..but idk
do you think it could be the tranny at all?
