Default 2006 Beetle Red Flashing Temp Light

Okay so, I'm a little bit confused. My temp light flashes red and beeps when its cold. I checked the coolant level and its above the minimum. It is right at the half way mark, I guess is the best way I can think of explaining it.
Could that be whats wrong?

Halfway between the min and max line? Or halfway full in the coolant reservoir?

I'm awful at this I'm sorry... you know where the division is in the dead middle of the container? It is right at that.

The min line is about there. Top up the reservoir until just before the max line. I bet the coolant is right at the threshold for level.

If after topping the coolant up to the max mark the light still flashes and beeps, it is time to buy a new coolant reservoir bottle. I (and several others) had the same issue and a new coolant reservoir bottle fixed the issue.
