There are several different companies that make adapters to fit almost any wheel/car combo. What you need to know before you can answer the question is what the offset of the wheel in question is. The thinnest adapter you can get (I think) is about 15mm. So whatever the offset of the wheel you want, minus the thickness of the adapter is what you need to know (final offset). If your final offset is less than 35mm, depending on your wheel width, is goona start poking.

Need to know: wheel width and offset
wheel adapter thickness

How low are you sitting? With that offset combined with a spacer/adapter, you're gonna poke a bit. Can you test fit the wheels? Obviously you can't mount them without the adapters, but you could take a wheel off, put one of the others up to the hub and then measure out from the lip of the wheel the distance of the spacer/adapter you choose, and see if it's something you're gonna be happy with. You're gonna want weight on the suspension when you measure.

my beetle is still stock height, so if its poking it would look ugly imo. what offset u guys recommend to get flush look?

Whatever wheels you get, if they are not a staggered fitment, will be more tucked in the rear than the fronts.
I would say on an 8" wheel you would want to be ET35 would get you close to flush. Without physically measuring I couldn't tell you for sure but this is probably the lowest offset you would want to use if you don't want poke and get you close to flush.

try brfore you buy. if you go with too high offset you start rubbing on suspension parts..i.e. struts.
